This was so easy and simply divine! Serve with a tossed salad and corn on the cobb with lime butter...YUM! Freezes great too.
Ingredients
* 1 pound lean ground beef (90% lean)
* 1 large onion, chopped
* 2 cups salsa
* 1 can (15 ounces) black beans, rinsed and drained
* 1/4 cup reduced-fat Italian salad dressing
* 2 tablespoons reduced-sodium taco seasoning
* 1/4 teaspoon ground cumin
* 6 flour tortillas (8 inches)
* 3/4 cup reduced-fat sour cream
* 1 cup (4 ounces) shredded reduced-fat Mexican cheese blend
* 1 cup shredded lettuce
* 1 medium tomato, chopped
* 1/4 cup minced fresh cilantro
Directions
* In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the salsa, beans, dressing, taco seasoning and cumin. Place three tortillas in a 2-qt. baking dish coated with cooking spray. Layer with half of the meat mixture, sour cream and cheese. Repeat layers.
* Cover and bake at 400° for 25 minutes. Uncover; bake 5-10 minutes longer or until heated through. Let stand for 5 minutes before topping with lettuce, tomato and cilantro. Yield: 8 servings.

Whoever loves money never has money enough; whoever loves wealth is never satisfied with his income. This too is meaningless. Ecclesiastes 5:10 NIV
Go around the table and ask each person what importance do they put on money? What do you think God is saying in this scripture to us? Does money truly satisfy and bring happiness, or is it simply a tool to be used to do things for others, to advance the things of God, to take care of our needs and our families?
The discovery of Solomon is one that says, money should not be your life pursuit, but simply used as a tool to take care of things as you pursue and run after the things of God, the things that matter eternally not temporarily. All things shall one day pass away and be made new or as some might say “you can’t take it with you”. In the end of our life what will we look back and say we pursued more than anything else?
Lord, help us to place importance on the things that really matter in life, and to think about the time spent with our family, with You, with our friends. Help us to create ways to give our life away not hoard up our treasures on this earth so moth and rust can easily destroy, but to place our treasure on the things that matter to You Lord. Lord, help us to be grateful for what you have given to us at all times and to never become obsessed with
money, material possessions, or attaining wealth to be self serving. Help us to remain wise and humble in the matters of how we use our money and how we spend our money.
