Good Life Recipe to Cook and Share Easy Pecan Chicken with Dijon Sauce This is a super easy but deliciously rich chicken recipe. I adapted it from a catered dish I enjoyed at a John Maxwell event where I spoke. It goes wonderfully well with roasted asparagus or green beans....mashed buttermilk potatoes or brown rice! Chicken 1 cup finely chopped pecans 1 cup Italian-flavored breadcrumbs 8 large chicken breast halves 1/2 cup butter (1 stick), melted Sauce 1/2 cup butter (1 stick), melted 1/3 c all-purpose flour 2-3 cans chicken broth Fresh basil, chopped Dijon mustard to taste Salt and pepper Preheat oven to 350º. Grease a 9x13-inch pan or spray it with nonstick spray. Combine nuts and breadcrumbs and spread out on a plate. Place ½ cup melted butter in a bowl. Dip chicken pieces in the butter, then dredge in nut-crumb mixture. Arrange in pan, cover with aluminum foil, and bake 30-40 minutes. To make the sauce, mix remaining melted butter with flour and cook for one minute, stirring. Add chicken broth slowly until you get the consistency you want. Add basil, mustard, and salt and pepper to taste and serve over chicken breasts. Serves 8.
