6 chicken breast halves
1/3 cp of Dijon mustard
3/4 cp of Italian bread crumbs
1 Lemon
1/4 cup of butter
8 ounces of fettuccine
Brush chicken breasts with mustard. Coat with bread crumbs and place, rounded side up, in 13 x 9 inch baking dish lined lightly with olive oil. Mix lemon juice, lemon peel, and butter and pour over chicken. Bake at 375 degrees for 45 min, or until chicken is cooked through, basting once or twice. If chicken pieces are quite thin you may need to reduce cooking time.
Start pasta about fifteen minutes before chicken is done, following package directions. Drain and toss with some of the lemon butter mixture from baking dish. Makes six servings.
